POSITION OVERVIEW:
The role of Sous Chef is a role which involves managing, supporting and supervising the quality of products and services for the breakfast + small plate food program. The position requirements and responsibilities are outlined below.

RESPONSIBILITIES:
Works alongside Kitchen Operations + ownership team in recipe development + new menu rollout management
Manages timelines in the kitchen for menu creation
Manages the upkeep of vendor pricing
Manages all daily vendor ordering for assigned locations. All new product must be approved by Kitchen Manager and Operations team
Participates in the use of Inventory and Restaurant software as it relates to Mr. West Kitchen
Manages alongside the GM + Kitchen Ops in training for kitchen employees to company standards
Maintains a collaborative + creative work environment for all kitchen staff
Manages the maintenance of the QC guide and recipes with updates for new items and photos, as delegated by the GM + Kitchen Ops
Ensures consistency of dishes and follow-through for entire kitchen staff
Verifies that kitchen staff follows all recipes and portions servings correctly
Manages the maintenance of kitchen cleaning and organizing (making sure team keeps kitchen, dish, and storage areas clean and organized up to code standard) delegating when necessary
Sets excellent customer service and work ethic examples
Actively participates as a member of the management team
Regularly checks in with GMs and FOH management to maintain collaborative work environment
Performs additional responsibilities, although not detailed, as requested by the GM, Mr W ownership, Kitchen Operations and management
Maintains the ability and willingness to work all kitchen stations when needed
Manages + participates in accurate count of inventory, delegating when necessary
Manages inventory management of all supplies and kitchen equipment, alongside the GM.
Manages any special orders for events, large orders, etc.
Manages Cheese and Charcuterie ordering
Project manages catering and event menus with support of Event Curator
○ Sets and Manages QC standards and QC guide for all Catering Menu items
○ Ensures consistency of event platters and follow-through for entire kitchen staff
○ Leads training for kitchen employees to company standards of Event boards, Event food, and portions
○ Manages Event prep work and delegates as necessary (including on days and time off)
Manages daily prep lists, delegation and communication with kitchen staff
Receives product by verifying invoice and appropriate quality of merchandise at all times
Ensures that all stations remain stocked before, during, and after kitchen hours
Assists with interviewing as delegated by the GM + Kitchen Ops
Manages interviewing and hiring alongside the HR Administrator, GM + Kitchen Ops
Conducts and follows through on staff reviews alongside the GM, as requested by the HR Administrator
Conducts touch bases as requested by employees, and reports necessary information to the HR Administrator
Supports Staffing Manager with kitchen scheduling
Continuously develops food knowledge with seasonality awareness specific to the PNW
Sets standards for quality control by constantly tasting prep recipes and teaching both FOH and BOH staff on all menu items regularly
Maintains a level of excitement and creativity in kitchen menu development as opportunities and restaurant operations evolve
Has a full understanding of Mr. West brand, ethos and culture, specifically as it relates to menu development

REQUIREMENTS:
Skills/Knowledge Required:
Hard working/can-do, proactive attitude.
Cool under pressure
Incredibly detail oriented when prepping and plating food
Flexibility in your job with the ability to cross train and multitask
Experience in a fast paced, multi-faceted kitchen
Customer service skills and the ability to present and talk about food + beverages
Team player
Requirements

2+ years previous experience in a related leadership position (school experience will be considered)
Valid Food Handler Certification required.
Must be able to stand or walk a minimum eight-hour shift. Requires mobility and prolonged standing, walking, bending and lifting up to 50 lbs.
Flexible schedule - Able to work a variety of shifts; Full time positions available.
